Yes! I love making waffles but it makes a tremendous mess.
I have used Darina Allen’s recipe for waffles and put a tablespoon of cornmeal (fine polenta) in and it’s delicious.
This blog is great and the cornmeal waffles in the book are good but having an extra bowl for whipping eggwhites is frustrating (http://www.willitwaffle.com/will-it-waffle/ )
I haven’t yet found the perfect recipe (for results AND for effort involved), but I have discovered that waffles freeze alright and you can reheat them in the toaster, so I make loads when I’m up for making some at all. I think my favourite are the ones with a bit of corn in them, served with whipped cream and maple syrup.
I’ve made my own waffle recipe with potato and corn for serving with chilli, and it’s not too bad but not as tasty as sweet waffles 🙂
