Because evolution doesn’t happen in a straight line. Think of a tree, with different branches. Different groups of animals branch off the tree in different directions and evolve differently, so very different outcomes exist. This can happen thanks to geographical isolation for example, where one group is cut off from another and evolves in a different way depending on the environment it faces.
Sure, there was a common ancestor for every species you can think of, even very different ones, but apes (including humans!) are just a branch off that tree. Hope this helps! 😉
