This is a good question. The next to evolve in huumans is likley to be something on the molecular scale that require small enough changes. For example the shape of our red blood cells have changed in populations of people who are most at risk of getting malaria. By changing just a small thing (cell shape) people which carry these cells are less likly to die of the disease.
So my money on the next thing to evolve in humans is on something related to immunity to diseases.
