There are 2 types of cholesterol, HDL and LDL. LDL is usually seen as bad cholesterol and can stick to arteries. HDL can help remove the LDL from the arteries and is thought to be good cholesterol. If our diet is high in fat, our body can also make more LDL, which can stick to our arteries.
If we change our diet from foods that contains fat and LDL, to foods that are lower in fat and contain very little cholesterol, but the cholesterol that is present is HDL, then gradually cholesterol stuck in the arteries can reduce.
