      I looked at a small microbe called Bacillus cereus. It can make nasty toxins and cause food poisoning. It is also really tough, it can make a hard shell called a spore, and hide in it when the conditions are too warm/too dry. It can survive cooking, and dairy processing, and that makes it an issue for food processors.
