      The heat used when cooking denatures proteins in the egg. Denaturation is the unraveling of the proteins, this allows coagulation which is the shrinking and setting of the proteins also in response to heat. This causes the egg to become solid.

      The proteins in the egg are very sensible to heat: when they are cooked their structure change causing the solidification, this also makes the egg far more digestible.

      When you cook an egg, the heat causes the proteins to denature and change, making it solid.
