      Potatoes are what are known as ‘root vegetables’ or ‘tubers’ which means that the edible part of the plant is actually the root which grows beneath the ground, rather than the leafy bit on top (in potatoes, the leafy bit is actually poisonous). Potato plants grow from seeds: they grow roots downwards and stems/leaves upwards. As they flower, the also start to develop swellings on the roots: these take up a lot of the energy and nutrients in the plant, and eventually develop into potatoes.
