Basically they are adapted to eating very different types of food.
Carnivores all have sharp teeth, and often sharp claws. The types of teeth and claws they have tell us how they hunt. A T-Rex for example would use its large strong teeth to bite and break bones, where as a slightly smaller dinosaurs like Allosaurus or raptors have smaller sharp teeth and claws used to cut and slash their prey. Carnivores also all walked on two legs.
Herbivores are a lot of different body plans and could grow a lot bigger than Carnivores. Different ones walked on four legs (think the long-necked dinosaurs) or two legs (duck-billed dinosaurs). Teeth and claws were a lot different. They were not sharp and used for stripping leaves and in some cases chewing their food. They often did not have sharp claws but often something more similar to hooves.
