Depending where and how you store your water, it will react with the container. So water itself doesn’t go off, but it may, for example, dissolve substances from a container. Such process may take a bit of time, days/months/years/decades, so you may think about this at some point.
Also, it depends who will use/drink the water at the end – an animal, an adult, a baby? There are different standards of a water quality which would apply.
To me, when I see an expiry date on water bottles, I’m not too concerned about it…(like most expiry dates)
