You would get very, very sick. Watermelons don’t contain all the different nutrients that your body needs in order to function properly. Not long after starting this challenge you would be severely malnourished. Eventually you would probably develop an illness like hypocalcemia or anemia.
You also need to ask whether or not you could get adequate hydration from eating watermelons.
I recommend sticking with a balanced diet, even if you do love watermelon.
