Hi! Imagine that I am just writing a project where I am proposing to use enzymes from these extremophiles to facilitate lactose removal in milk (to make the milk much easier to digest) and produce bioethanol (an alternative fuel source) much more efficiently! When you are using enzymes instead of conventional processes, you immediately have a much more environmentally friendly process because enzymes are completely natural, they are easily degraded and so safe you can eat them!
