I am a Chemist who chose to become a Food Scientist.
My main research interests are:
a/ how food lipids can stop inflammation and the related onset of Cardiovascular diseases (CVDs),
b/ how food chain is contaminated by heavy metals and
c/ how plant and animal cells biosynthesize flavour molecules.
In UL , the focus of my team is towards the sustainable production of functional food and nutraceuticals against inflammation.
I have edited a book on marine oils, published >60 peer-reviewed articles (h-index 20) and I am a co-inventor in two patents.
With my team in UL, we are currently writing a book on “The Impact of Nutrition and Statins on Cardiovascular Diseases” for Elsevier.
