‘Think Globally, Act Locally’. Yes hunger is a global problem, and in my research projects that I have, we look into recycling food processing waste, like potato peels, apple pomace, orange peels, etc. Millions of tonnes of such waste are produced and they can serve as a cheap resources for recovering food ingredients that are health-promoting for the consumers. It will not solve the global problem, but a small step towards sustainable way of re-producing food.
No, I don’t do any research in that area but there is certainly something galling about the thought of all the excess food we have in Europe when there are other countries that can barely feed themselves. Its going to take a lot more than just us not throwing food away unfortunately. It will need a concerted effort from the more well-off countries like our own, and a lot of investment into irrigation systems and the like, before any real changes will happen.
When it comes to eliminating world hunger, I think that political solutions, even more than scientific solutions are what are drastically needed, though science certainly plays a role in enhancing productivity, efficiencies, disease resistance etc.
