  I had to check with my friends who are Animal scientists and specialise in cows. During pregnancy there is a whole heap of hormones that are released which stimulates cells in the udder to start producing milk after the cow gives birth. Once this is stimulated by milking machines after birth it will continue to cause the hormones to release continuing to produce the milk.
