        Well Aoife, I don’t just feed the volunteers nothing but cheese!! In the study we are running at the moment, the volunteers are given 120g of cheese to add into their daily diet for 6 weeks. We collect blood samples at the beginning and end of the 6 weeks, as well as body weight measures. We then look to see how things have changed. The study will be going on for a year so we don’t analyze the blood until the end, as its better to do it all at once. We will be looking at cholesterol changes, as recent evidence suggests cheese can have beneficial effects on cholesterol. It would be very exciting if we saw that as it has never been examined using Irish cheeses before!
