Bacon and ham are made from pork meat. Bacon is made from pork loin (that is more or less in the back of the pig). Surrounding this piece of meat there is some fat, that fat is what you call fatty bits and is tehre because is part of it. I don’t know if you have seen the streaky rashers, this is also called bacon in many countries and has a lot of fat in it. This is because the streaky rashers are made from pork belly and the belly has this fat layers in it.
In the case of the ham it really depends on the ham. There are different types of ham. All of them come from meat from the pork leg, but some of them are ground before cooked and other don’t. If the fatty bits are in the outer part they probably come from the whole piece, it is just fat that is around and it was there before cooked. If it is inside the ham then this fat comes from the pork leg but has been ground and mixed with the meat.
