      This is because the egg shell contains a chemical substance called calcium carbonate (that make the shell hard) and vinegar contains an acid called acetic acid. When combinig this two substances a reaction takes place generating carbon dioxide, that is the gas in the bubbles you see when put into vinegar. So if we leave the egg more than a day insde the vinegar, the shell wiull dissolve and it will turn rubbery because all the calcium carbonate will have reacted.
