      There are a couple of different ways that food can go off. Microorganisms such as bacteria and yeasts cause some foods such as breads and milks to go off. They live all around us and if they land on the food surface they begin to grow cause the food to go off. The microbes in milk (lactic acid bacteria) when they grow cause the production of lactic acid causing the milk to go sour and lumpy (this is sped up at room temperature as the microbes love warmth). Food can also go off as a result of chemical reactions within the food or reactions with the air.. butter goes off in this way when it is in contact with the air.

      These microorganisms are like little tiny bugs that we cannot see unless we use a microscope. They are everywhere, even in food that is not off. The problem is when this bugs grow a lot and there are many of them, then is when the food goes off
