Great question-and a really difficult one to answer!
However, I have done some study on combinations of foods (dietary patterns) that people eat and the relationship between certain patterns and cardiovascular disease and diabetes. I find this really interesting as it is really important to consider all the food we eat as a whole and not only the effects of individual foods and nutrients 🙂 As in order to be healthy we should eat a varied diet with everything in moderation!
The most interesting thing I have studied is how people respond differently to the exact same food, I think this is a really cool side of nutrition as how people respond to food can determine the effect food has on their health.
