This is due to the subastances in tomatoes.. lycopene and carotene. These make the tomatoes a red colour.

When the tomatoes start to grow they are not red, they are green because they have a substance called chlorophyll that is green. Then they turn into red when they produce more lycopene, a red substance, and chlorophyll dissolves.
