      This is because when milk goes off it is caused by lactic acid bacteria growing in the milk (they are in the milk already and do not harm us!). When the lactic acid bacteria start to grow it uses the sugar in milk (called lactose) and creates lactic acid. This results in the pH of the milk dropping (as an acid is created!) and this causes the milk protein (called casein) to clump together creating a change in texture. This is actually the process by which cheese is made more or less!

      Exactly! When the acid is created the milk proteins coagulates and stops being in the milk by precipitating, so the texture change appear.
