• Question: Why have you chose to be in meat science instead of vegetable or fruit science

      To be honest I didn’t choose it. I studied food science and technology and then a master of food science. At the end of this master I had to start a small research and I did it on Orange juice, so at that time I was a fruit scientist! hehe.

      It was when I looked for doing a PhD I found a project about meat science and I liked it and I joined it. Since then I have worked mostly on meat. This is because you specialise in one food and then is easier to keep working on that food. But I know of people who started working on fish and they are now working on cereals, so who knows. For the moment I like meat science and I think is very important to research in this area as meat is very important for Ireland and most of the European countries.
